The chef:

Benoit WITZ began his career in the 1980s as a kitchen assistant in Paul Bocuse’s restaurant in Lyon. He then worked at the Pré Catelan in Paris, before joining the kitchen staff at the opening of Alain Ducasse’s Paris restaurant, Louis XV, in 1987. Alain Ducasse made him head chef in 1996 at La Bastide de Moustiers. He is current head at the Hostellerie de l’Abbaye de La Celle where he has officiated for eight years.
